Life in our house has been pretty frantic since I started back to work and launched Tiny Adventures a couple of months ago. Getting to 5pm and thinking ‘Oh crikey what’s for dinner?’ seems to be happening more frequently. So I thought that in my next few posts I’d share a few tasty meals I have up my sleeve that take no more than 15 minutes to prepare, mainly use common pantry items and more importantly Freddie loves them.
All mums and dads need a repertoire of tasty quick meals that can be put together in a matter of minutes. Ideally they still need to give your little one a variety of nutrients, include protein to fill up your little ones tummy and keep them full until breakfast and hopefully go some way towards meeting their iron or calcium needs. When all else fails baked beans on toast with cheese, a boiled egg with soldiers or tinned spaghetti with cheese are pretty good options for the 5pm panic.
Hopefully this quick fix will go down as well with your little one as it does with Freddie. You’ll be amazed how well they will manage to eat rice with their fingers; I tried to encourage Freddie to use his spoon but he did a combo of spoon action and shoveling it in with his fingers!
2 chicken tenderloins (about 80g)
3 tbsp frozen peas or peas and sweetcorn
1/4 – 1/2 cup white rice (depending on how hungry your baby is)
butter and oil to pan fry chicken
In a small saucepan place rice in water and bring to the boil, then simmer for about 12 minutes or until tender and cooked.
At the same time in a frying pan melt butter and oil over a medium heat. Fry chicken until cooked through and slightly caramelised from the butter.
5 minutes before the rice is cooked add the frozen peas to the rice and continue to cook.
Drain the rice and peas. You can either chop the chicken up and mix into rice and peas or serve the chicken on the side if, like Freddie, your baby doesn’t like their food all mixed up together.
